This NJ pasta shop makes 10,000 ravioli a week the old-fashioned way

Flour. Water. Egg. It starts simply, said Dominick Discenza. Building on those three ingredients with "only the best" in cheeses, meats, spices, herbs and oils is the key to Discenza and his family-run L&D Sapore Ravioli & Cheese in Middlesex. For more than 55 years, the Discenza family has shared Italian traditions, family recipes and fresh pasta through its deli and pasta shop. The shop was recently named to Yelp’s 2026 list of the Top 100 Pasta Places in the U.S. Like many of the pasta shops on the list, Sapore's roots run deep into Italian territory, with chef-owners who hail from traditional pasta makers. Many learned the craft from their families with recipes handed down from generation to generation. At Sapore Ravioli, the story begins in the small village of Baranello, Italy. Dicsenza learned to cook while watching and working with his grandparents before he came to the U.S. at age 12 with his family. They would get milk from the cows, make it into mozzarella. They grew olives to make olive oil. Everything was "in the family," he said. Those traditions and flavors remain with him today. Discenza founded Sapore Ravioli & Cheese in 1970, determined to share
