Washburne Café to open second location, joining TrackTown Pizza
Thurston's new community center has made the Springfield enclave a hotbed of second locations for popular restaurants. The next to open up: Washburn Café. The Register-Guard reported last year that TrackTown Pizza, a Eugene staple for track and field lovers near the University of Oregon campus, is adding a second location for the first time since it opened in 1978. Next up is Mindy Weber's Springfield coffee and made-from-scratch eatery, the Washburne Café. Nine years after first opening, Washburn also is ready to expand. Weber hopes to open the second Washburne Café, which will be in the new building by Thurston High School , by the end of February. The new coffee shop doesn't have a kitchen, but there will be a small bakery where the Washburne crew will make fresh-baked goods every morning. Weber is planning to have grab-and-go options for heartier fare, and the cafe still will have the same specialty coffee drinks. "It's kind of a change because our downtown location is so food focused," she said. "But we're working with a small space, so we have to get crafty." Weber is planning the grand opening for Feb. 28, but is hoping for a soft opening before

Mandy's Family Restaurant plans second Eugene location
What small Eugene diner is open 24 hours, serves amazing chicken and waffles, and is planning to open a second location? If you guessed Mandy's Family Restaurant , you're right. When Manola's Thai food, a Franklin Avenue foodie staple, closed in 2025, the diners of Eugene wondered what would open in the space next. Mandy's is hoping to open a second location on Franklin in the spring of 2026. Mandy's is well known in the community for its hearty diner fare, pie, milkshakes, and around-the-clock service. After opening in 2019, and being hailed as the best new restaurant by readers of the Eugene Weekly, Mandy's has also dedicated resources to feeding the unhoused in Eugene. Most recently, Egan Warming Center operators St. Vincent de Paul issued a heartfelt thanks to Mandy's for showing up with food multiple times during the record-setting activation in January. Mandy's Willamette Street location is open 24 hours a day, and the Mandy's team is still deciding hours for the second location.
