Sacramento County Health Inspectors gave a red placard to a Japanese fusion restaurant after finding about 20 rodent droppings throughout the facility. Additionally, 12 restaurants were cited for unattended raw chicken, gunk found on a can opener and a missing food safety certificate. What do these inspections mean? While a yellow placard signals two or more major violations, these are typically corrected or mitigated during the inspection, according to the Sacramento County Retail Food Inspection Guide . A red placard, however, signals “imminent danger to public health and safety” and suspends an establishment’s health permit until violations are corrected. This could include, but is not limited to, major vermin contamination . In contrast, a green placard means a restaurant passed inspection. The county performs about 14,000 inspections annually and about 97% of establishments pass, spokesman Ken Casparis previously told The Sacramento Bee. Fukumi Restaurant Group combined its two popular eateries, Fukumi Chaya x Momo Katsu, and Pier 50 Sushi, in one building in Davis. Every year on the third Thursday of November, Beaujolais Nouveau is released and immediately flown to shops and restaurants around the world. Made from Gamay grapes in the Beaujolais region of France, the wine is meant to drink while it’s still young. According to Serious Eats , most Beaujolais Nouveau is mass-produced, using lower-grade grapes from the region. It tends to be bright and fruit-forward, a “simple, chuggable wine for celebrating the harvest.” Its more serious cousin, Cru Beaujolais, is made in a cluster of 10 villages in the northern part of the region, with premium grapes and more sophisticated winemaking methods. Because of its immediacy, many restaurants wrap events around the release, so people can experience the wine in the way it’s intended.
