A growing Lexington County development will add a new restaurant. What to know

A spot for smoothies, wraps and other treats is on the way at a growing development in Lexington County. Tropical Smoothie Cafe, which has locations across the U.S., is bringing a new storefront to the Platt Springs Crossing development in the 5400 block of Platt Springs Road, near South Lake Drive, in Lexington’s busy Red Bank area. The restaurant will be in a shopping strip next door to the development’s Lowes Foods supermarket, and near a Planet Fitness. There are banners hanging on the building announcing the Tropical Smoothie Cafe, and construction and prep work was ongoing in the space when a reporter briefly went by Monday morning. An opening date for the cafe hasn’t been publicly announced. There are more than 1,700 Tropical Smoothie Cafe locations across the U.S., according to data website ScrapeHero . The restaurant’s menu includes, as you would expect, fruit smoothies, but also breakfast wraps, acai bowls, cold brew coffee and more. Platt Springs Crossing is a 60-acre, $65 million mixed-use project that is steadily expanding off Platt Springs Road near South Lake Drive in Red Bank. A new spot for pizza and calzones has made its debut along a busy street in West Columbia. New Brooklyn Pizza has debuted at 134 State St. in West Columbia. That’s near the State Street Pub and the West Point Coin Shop, less than a half-mile west of the Gervais Street bridge. The new pizzeria noted on Instagram that it is still in a soft opening phase, with hours this week being noon to 10 p.m. Tuesday through Thursday, 4 p.m. to midnight on Friday and Saturday, and 1 to 6 p.m. on Sunday. The pizza menu at New Brooklyn includes a number of artisanal, New York-style pies. That includes, among others, the cup & char, which comes with Battistoni cup & char pepperoni, aged mozzarella and a robust red sauce. Also among the offerings is the Pig & Fig, which comes with Four Oaks country ham, thinly sliced prosciutto, fresh fig jam and ricotta salata. New Brooklyn also has a selection of calzones , including the Meatlover. That comes with pepperoni, soppressata, chicken, mozzarella and a house red sauce. During a recent stop, this reporter got the grilled cheese calzone, which comes stuffed with mozzarella, provolone and whipped ricotta.

This growing Mexican fusion chain has eyes on expanding to the Columbia area

A growing Mexican fusion chain that has restaurants in a number of states is looking to bring locations to the Columbia area. Bubbakoo’s Burritos, which was founded in New Jersey in 2008 and has expanded to more than 150 locations in the years since, is looking to expand to Columbia and the Midlands, Bubbakoo’s vice president for development Michael Lassen told The State. The company currently has restaurants in New Jersey, North Carolina, Tennessee, Delaware, Florida, Georgia, Kentucky, Maryland and a number of other states. Lassen noted there are a number of factors spurring Bubbakoo’s interest in the Columbia area, including demographics, proximity to the University of South Carolina and other factors. “We’ve identified that the Southeast, particularly the Carolinas, would be a very big success,” Lassen said. “It’s a good culture fit for us. We are actively looking for operators and real estate (in Columbia) as we speak.” The menu at Bubbakooo’s includes burritos, quesadillas, tacos, nachos, curly fries, tater tots, churro bites, apple pie egg rolls and more. The restaurant gives customers the chance to customize their burritos, but also offers signature items such as the Nashville Hot Chicken burrito, which comes with fried chicken tossed in Nashville
