Armed with tongs, a collection of middle school students encircled about 10 grills on the west side of the Waseca Junior Senior High School the afternoon of Oct. 26. Members of a Family and Consumer Sciences food preparation class, they were there to try their hands at the safe preparation of various foods, including chicken, pork, steak, and tuna steaks. SCENE NOVEMBER - Mexican restaurants bring the heat and flavor in Southern Minnesota

When I was a 7-year-old youngster growing up in North Mankato, the Pfau family opened Mankato’s first Taco John’s. Though my family heritage is traced primarily to ancestors from the British Isles, I was the beneficiary of parents who were enthusiastic cross-cultural eaters. (I could have easily done without my dad’s predilection for braunschweiger sandwiches though.) And while my mom was an experienced cook with Depression-era roots who could whip up terrific and economical entrées on the fly, she was also a busy public school teacher who never hesitated to pick up fast food or suggest our family eat dinner at Happy Chef or Country Kitchen when she was just too tired to produce a made-from-scratch meal at the end of a long work day. Hence, I was familiar from a young age with the taste sensations of Tastee Freez malts and fries, Pagliai’s pizza, Robby’s hamburgers and Country Boy (or Country Girl) burger baskets. But when Taco John’s hit town, their soft-shell tacos, sour cream-drenched super burritos, cinnamon sugar-topped apple grandés and Taco Tuesday specials stole my heart. Long-awaited animal shelter nears fundraising finish line

The wait for an animal shelter in Steele County has stretched on longer than anyone expected, but the volunteers guiding the project have announced they’re finally close to meeting their goal. After several years of fundraising, they hope to have the shelter up and running soon. Construction is nearly complete on the facility, which stands next to Lake Chase Dog Park. Steele County Humane Society board members Liane Peterson and Deb Singelstad predicted an opening date early next year. Although it was originally budgeted at $2 million, repeated delays and soaring construction costs have pushed the actual price tag closer to $2.4 million. More than once, construction has paused to allow fundraising to catch up. They’re currently seeking “a couple hundred thousand” to finish the building, purchase furnishings and fixtures and give them the initial operating funds they need. Singelstad said that even now a handful of large donations could advance the project’s timeline. “Once we get open, it’s going to be a big asset to Steele County. We’ll be able to house these animals that need help,” she said. Crews are in the third and final stage of construction, installing ceiling grids, electric fixtures, kennels and other necessities.
