Situated atop the historic Royal Sonesta Chase Park Plaza hotel are four colonies of bees hard at work – much like the people crisscrossing the streets below. These hives are the result of meticulous caretaking by Eric Phillips, the hotel's executive chef and resident beekeeper, who started the hives in 2018 with then-executive chef Gunter Weber. “I became hooked on it and have a real passion for beekeeping,” Phillips says. “They became part of my work responsibilities. I have been the resident beekeeper ever since.”
