    Boondocks

108 South Jefferson Avenue, West Jefferson

    Grade: A

    Score: 96

The restaurant received a 1.5-point demerit for food improperly separated and protected. Single-use gloves can only be used for one task such as working with ready to eat foods, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. Noted during inspection one cookline employee adjusting clothing with gloves and one back kitchen employee wiping gloves with a wiping cloth. Discussed with one employee and PIC that no parts of clothing, body, hats, glasses, or potentially contaminated surfaces should be touched when gloves are on without removing gloves, washing hands, and donning a new pair of gloves. Please work with one another to identify habits and point out times someone is unintentionally touching their clothing or other unclean surfaces. The restaurant received a 1.5-point demerit for food contact surfaces needing to be better cleaned/sanitized. Deli slicer was reported as last used prior to the day of inspection and had been stored with food debris in upper area behind blade. This area is difficult to clean and discussed using small brush in areas that will not scratch blade. Additional care is needed in breaking down slicer, and properly washing, rinsing, and sanitizing to remove all buildup before storage. One clean metal pan had minor food buildup still left in it. Noted some sticker residue left on clean metal and plastic containers. PIC reported that the stickers had been difficult to remove. Remove all stickers and residue before and during the wash process. General comment: Discussed better cleaning along one ledge in upper ice making parts of right ice machine. Overall machines were in clean condition with one area that needed more detailed cleaning. The restaurant received a 1-point demerit for toxic substances properly identified, stored and used. Noted one spray bottle with blue product in it labeled as sanitizer. Corrected by PIC labeling this as Windex. Note that once a bottle has been used for one type of chemical, it should not be rinsed/cleaned and re-used for a different type of chemical. Label all spray bottles with their appropriate contents.

Boondocks received scores of 94.5 and 96 on two previous inspections.
