    Ashe County health inspections

    The following information was provided by Appalachian Health Care. Restaurants and food stands are inspected one to four times per year, based on risk frequency, and institutional food service facilities are inspected four times per year.

    Ashe County High School Cafeteria

    184 Campus Drive, West Jefferson

    The cafeteria received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Address condensation dripping onto pan lids in both milk coolers. Temperature has warmed significantly since last week and Person In Charge (PIC) reported that these are unplugged over weekend and plugged in on Monday mornings. One cooler was pulled further away from wall to allow for air flow. Adjust unit and call for repair as needed to prevent condensation from forming & dripping on cartons of milk. The cafeteria received a half-point demerit for ventilation/lighting repairs needed. Cleaning needed on ceiling around fans in dishroom to remove dust accumulation. Also cleaning needed on black grates on back section of the HVAC units (two in kitchen/one in dishroom) to remove dust buildup. Replace few burned out bulbs in fixture near two comp. sink with spray wand. Several bulbs under hood are flickering and should be changed/checked. Discussed with PIC how staining was noted in several light fixture covers (near two comp w/spray wand) and should be evaluated for ceiling leaks.

    Ashe Outreach Kitchen

    11719 NC Highway 88, Creston

    The kitchen received a 1.5-point demerit for food-contact surfaces needing to be better cleaned and sanitized. Mechanical dish machine registered less than 160 degrees on a test strip at the onset of the inspection. Service technician arrived during the inspection and repaired dish machine. All dishes previously washed will be re-washed/sanitized. Several forks, spoons, knives, and tongs were stored as clean, with dried food residues present. All items were removed from clean dish storage and moved to dish room. The kitchen received a 1.5-point demerit for improper cold holding temperatures. Milk and slaw registered above required 41 degrees in Traulsen two-door. Slaw registered 43 degrees and milk registered 44 degrees. Slaw was discarded during the inspection. Traulsen needs to be serviced. PIC removed TCS food from unit, which only included milk and slaw, and unit will not be used for TCS (temperature control for safety) until repaired. The kitchen received a half-point demerit for personal cleanliness. Volunteer working with food was wearing a watch. Watches and jewelry on hands and wrist impede thorough hand/wrist washing. Volunteer removed the watch during the inspection and washed hands. The kitchen received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Temperature of Traulsen unit registers 44 degrees. Establishment is looking for new refrigeration equipment. Bottom of interior Traulsen refrigerator is scuffed and worn. Shelves are rusted in sliding glass True refrigeration unit, which is also present with water/condensation on glass doors and in the bottom. Ice under evaporator in walk in freezer, is accumulating in a pan placed to catch it. Several small, domestic appliances in the establishment, such as food processors and crock pots are not NSF approved.

    Ashe Outreach Kitchen received scores of 97.5 and 95 on two previous inspections.

    The restaurant received a 2-point demerit for hand cleaning/properly washed. One employee arrived for work, put on shirt and hat in kitchen and did not wash hands before touching dish washing equipment. Always wash hands upon entry into kitchen. Employee was asked to wash hands. Discussed when to wash hands during the inspection. The restaurant received a 1.5-point demerit for food-contact surfaces needing to be better cleaned and sanitized. Sanitizer detergent spray that was used during the inspection to clean and sanitize the meat slicer, did not register any chlorine sanitizer with a test strip. Label on the bottle indicates that sanitizer should register 100-199 ppm on a test strip. A new solution was made by the PIC during the inspection. Provide a separate spray bottle for warm water step indicated on Subway meat slicer cleaning procedure. Several utensils, stored as clean at clean dish storage area above three-comp sink, were present with greasy and/or dried residue, and were placed back onto the dirty side of three-comp sink to be washed. Cleaning/sanitizing solution in utensil rinse container registered about 25 ppm. Water in the utensil rinsing cup contained food debris and the water was cloudy. PIC stated the knives are changed out every two hours, usually. Change water at least every two hours according to Subway procedures, and wash, rinse and sanitize knives and utensils every four hours if used continually. PIC agreed to wash the unit. The restaurant received a 1.5-point demerit for improper date marking. Two containers were past the seven day limit in the walk in cooler and were voluntarily discarded by the PIC during the inspection. The restaurant received a half-point demerit for personal cleanliness. Several employees were wearing rings and watches while preparing food. Remove hand and arm jewelry, except for a plain metal band. One employee has a beard and needs a beard restraint. No beard restraints were present in the establishment. PIC agreed to purchase some soon.
