    Nine Sarasota area restaurants receive high-priority violations, nine ace inspections

    • High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwashing machine at bar 0ppm, dishwashing machine in kitchen 0ppm. Operator called for service.     Fourteen total violations, with seven high-priority violations:

    • High Priority - Employee handled raw grouper then handled a clean knife without washing hands.
    • High Priority - Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed an employee handle a cell phone then handle pasta which was placed in boiling water.
    • High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed packaged raw grouper stored in same container as unwrapped cooked octopus. The operator discarded the grouper due to thawing violation. **Corrected On-Site**
    • High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw veal removed from original packaging stored in same container with raw chicken in the walk-in cooler.     • High Priority - Stop sale issued on time/temperature control for safety food due to temperature abuse. Observed tiramisu (60F - cold holding) in the refrigerator near the pizza station.     • High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed at 200ppm and above in bucket and bar triple sink. Both corrected to 100ppm. **Corrected On-Site**

    • High Priority - Stop sale issued due to food not being in a wholesome, sound condition. Observed in walk-in cooler beef goulash date marked 4/17/24, beef goulash soup date marked 4/19/24. Educated person in charge on ready-to-eat, time/temperature control for safety food marked with a date that exceeds seven days after opening/preparation. Person in charge discarded both items.
    • High Priority - Time/temperature control for safety food cold held at greater than 41F. Observed in main kitchen area shell egg mixture (72F - cold holding.) Person in charge stated it was out for approximately an hour and added ice to mixture. After adding ice shell egg mixture (38F - cold holding). **Corrected On-Site**

    • High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135F. Observed on cooks line in front kitchen area: cooked chicken (115F - hot holding.) Person in charge stated it had been there for approximately one hour. Person in charge voluntarily discarded chicken. Person in charge did not want to reheat the chicken. **Warning**
