De Pere restaurant rebrands, moves temporarily for renovations | Streetwise
A Latin fusion restaurant is undergoing renovations and has temporarily moved to a different location in De Pere. Caliente La Fiesta Mexicana , 623 George St., has temporarily moved to 875 Heritage Road, next to the Swan Club. Vanessa Matheu, co-owner with her husband, Cristian, and Ann and Greg DeCleene, said in addition to the renovations, the restaurant will be rebranded. "The only thing that is staying the same, visually, is the original tin ceiling and the hardwood floors," Matheu said. As part of the rebrand, the restaurant's name will be shortened to Caliente. Matheu said the menu does not serve authentic Mexican food but more of a Latin fusion style cuisine. "We have Mexican-inspired items in our menu, but done our way," Matheu said. Matheu said her husband, who is from Guatemala, likes to experiment with various dishes and culinary styles. The menu offers their own versions of fajitas, burritos, quesadillas, soups, salads and specialty tacos. The restaurant also serves ceviche, which is prepared the Peruvian way, Matheu said. Peruvian ceviche is raw white fish or shrimp, cooked through marination, with lime, onions, cilantro, yellow or red pepper and salt. The Mexican and Ecuadorian versions are very similar, but
