The Wild Thyme Company Working on New Concept at its Headquarters

The Wild Thyme Company, a catering company that was behind downtown’s The Wild Thyme Table, is opening a new concept in Sorrento Valley at 8547 Miramar Pl.

The company opened its brick-and-mortar at 555 W C Street, Suite 103, in 2018, but it was forced to close during the pandemic. Now, the company is in the process of transferring its liquor license of The Wild Thyme Table to the catering company’s headquarters. Owner Dawn Carvajal tells What Now San Diego that once the transfer is approved, the site will eventually be used in conjunction with the commissary kitchen to host events, teambuilding classes, and private dinners.

While The Wild Thyme Company was forced to pivot during the pandemic and focus on its catering and events services, reopening the restaurant never left co-owners Dawn and Daisy Carvajal’s minds. Now, the duo are hoping to move their restaurant operations to the company’s home base. Dawn tells What Now San Diego that while the company will focus on private events and dinners at first, there’s a possibility that they will open the yet-to-be-named concept up to the public at a later date.

“When I created Wild Thyme in 2005, I’d been a sous chef, executive chef, and corporate chef; I’d managed 11 restaurants with four different concepts within the Aloha Group, had opened up the W Hotel in San Diego, and had run the café/catering for the prestigious Salk Institute,” Carvajal says on the company’s website.” But the most important job I held and continue to cherish is that of mother to Gia, my daughter. It’s from my want to spend time raising her with my passion for food that I created The Wild Thyme Company. I couldn’t be prouder of my two babies.”
