Over Easy brings 2nd breakfast to The Bridges location
Ready for second breakfast? Over Easy is preparing to open its second Sioux Falls restaurant , this time bringing the Arizona-based breakfast and brunch concept to The Bridges at 57th and Western Avenue. The restaurant will take over the former Rust & Co. retail space at 5005 S. Western Ave., Suite 100, which measures about 3,500 square feet . Rust & Co. closed its brick-and-mortar store on Oct. 24 but plans to continue operating online . The new Over Easy is tentatively expected to open about Feb. 1, after roughly three months of build-out work, including an outdoor patio on the north side of the building, according to broker associate Scott Blount, of Lloyd Companies. The expansion comes months after Over Easy opened its first Sioux Falls restaurant in June at Dawley Farm Village. The Attic Restaurant Group previously announced plans to bring three Over Easy locations to the Sioux Falls area, with local operator Cade Terveer, from Brandon and the SDSU Jackrabbits Football team , involved in the venture.
