    Ashe County health inspections

    The following information was provided by Appalachian Health Care. Restaurants and food stands are inspected one to four times per year, based on risk frequency, and institutional food service facilities are inspected four times per year.

    Bojangles

    158 Northview Drive, Jefferson

    Grade: A

    Score: 98

    The restaurant received a 1.5-point demerit for improper cold holding temperatures. Refrigeration unit under steam well had an ambient air temperature of 45 degrees. Shredded and sliced cheeses registered 44 degrees and were moved to walk-in cooler during the inspection. Salad registered between 41-46 degrees and was placed into the walk-in cooler to cool (salads were made that day, approximately three hours ago, per Person In Charge (PIC). Sliced tomatoes (sliced that day), and lettuce, still in the cooling process, registered 50 degrees, and were moved to walk-in cooler. This unit will not be used until repaired, per owner, who was present. All TCS foods were removed. This unit was not working during the last inspection, but was repaired by a technician. The restaurant received a half-point demerit for non-food contact surfaces needing to be better cleaned. Heavy dust observed on shelving above hot holding area. Dust present on cord of equipment on wall. Microbial growth observed on wall in walk-in cooler. Small prep table where can opener is located, needs cleaning on top and bottom shelves. Refrigeration units and gaskets have some buildup present. Non-food contact surfaces shall be cleaned at a frequency to preclude buildup.

    Bojangles received scores of 96 and 97.5 on two previous inspections.

    Dog Creek Trading Post

    5028 U.S. Highway 221 North, Jefferson

    Grade: A

    Score: 95.5

    The store received a 1.5-point demerit for food-contact surfaces needing to be better cleaned/sanitized. Some utensils stored as clean at clean dish shelving area, were found with residues and were placed into the two-comp sink to be re-washed. Food contact surfaces shall be clean to sight and touch. The store received a 1-point demerit for contamination prevented during food preparation/storage/display. Food crumbs and residue present around the prep unit fall into the prep unit when lid is opened. PIC agreed to clean prep unit and lid to prevent contamination of food, during the inspection. The store received a 1-point demerit for non-food contact surfaces needing to be better cleaned. Additional cleaning needed inside of refrigeration equipment, along gaskets, shelves, bottom of upright freezer and along shelves in drink cooler where cheese/bread is stored. Interior and exterior surfaces of microwave ovens present with food residue and splatter. Shelving throughout kitchen needs cleaning. The store received a half-point demerit for ware washing facilities installed/maintained/used improperly. Two-compartment sink has food particles and residue present on the clean dish drain board. Clean ware washing equipment daily. The store received a half-point demerit for physical facilities needing to be better cleaned/maintained.

    Dog Creek Trading Post received scores of 95 and 95 on two previous inspections.

    Hillbilly Grill

    601 South Jefferson Avenue, West Jefferson

    Grade: A

    Score: 92

    The restaurant received a 1.5-point demerit for food-contact surfaces needing to be better cleaned/sanitized. Quat. sanitizer must be maintained 200-400 ppm. During the inspection, cups and mugs were being sanitized at three-comp. sink with quat. sanitizer that measured 0 ppm. Corrected by draining and refilling to 200-300 ppm quat. sanitizer. Sanitizing vat will likely need to be drained and refilled more frequently due to heavy use during breakfast and lunch hours. Multiple plastic food containers still had sticker residue on them. Fully remove all stickers and residue before and as part of the wash process. The restaurant received a 1.5-point demerit for improper hot holding temperatures. Maintain all TCS foods at 135 degrees or above. Mashed potatoes being held in reach-in warmer were 106 degrees. Corrected by instructing PIC to reheat these to 165 degrees before placing back in unit. If space allows, holding these in tabletop warmer will help maintain temperature, since reach-in warmer is used for holding plated foods before service and is opened frequently. The restaurant received a 1.5-point demerit for improper cold holding temperatures. TCS foods shall be maintained at 41 degrees or less for cold holding. Sliced cheese in top of prep cooler was not stacked above fill line; however measured 44-48 degrees. Corrected by instructing PIC to store less product in top section, and more in bottom of prep cooler. Individual pans may also help maintain temperature, rather than placing multiple stacks with a lot of air space in between in one long pan. Two-door cooler was holding TCS foods at 42-44 degrees (sliced cheese 42-43 degrees, green beans 43 degrees, ham 44 degrees) at beginning of inspection. Several items cooled to 42 degrees by end of inspection, others were still 43 degrees. Adjust unit so that it maintains all TCS foods at 41 degrees or less. Noted that this unit did get frequent use during lunch rush and ambient air temperature should be set to account for frequent use. The restaurant received a 1-point demerit for no Certified Food Protection Manager on site during the inspection. The restaurant received a 1-point demerit for PIC shall demonstrate knowledge by 1) having a valid food protection manager certificate, 2) having no priority violations during inspection, OR 3) correctly answer 17 food safety questions during the inspection. PIC did not meet this criteria during the inspection. The restaurant received a half-point demerit for improper eating, tasting, drinking or tobacco use. Employees may only drink from covered beverage containers with lid/ straw, stored in a way that prevents contamination. One open cup of water was stored on bottom shelf at wait station. Corrected by instructing PIC to only drink from a covered container. The restaurant received a half-point demerit for Consumer advisory not provided for raw/ undercooked foods on menu. The restaurant received a half-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Replace split gaskets on wait station cooler, two-door freezer, tabletop freezer, and one-door freezer. Replace burned out bulbs in two-door freezer and one-door freezer. Replace missing fan cover in two-door upright freezer. Address rust in bottom of outside milk cooler. Few areas of rust have formed on bottom of dry goods shelf in narrow closet. Address any shelves in refrigerators that are beginning to chip or coating crack.

    Hillbilly Grill received scores of 91.5 and 93 on two previous inspections.

    Miller’s Country Store

    2144 N.C. Highway 88, West Jefferson

    Score: 98

    The store received a 1-point demerit for equipment, food and non-food contact surfaces needing to be better cleaned/maintained. Heavy water accumulation observed inside the glass merchandise refrigeration display case. Unit needs repair. PIC stated they are waiting on a part to fix the unit that is not expected to arrive for a month. Many wiping cloths being used to absorb excess water. The store received a half-point demerit for wiping cloths improperly used and stored. Wet wiping cloths have been left in the bottom of refrigeration units to collect excess water from condensation. Wet wiping cloths must be held in a solution of sanitizer between uses, and not be allowed to remain wet in food storage areas, as this practice can promote the growth of listeria. The store received a half-point demerit for physical facilities needing to be better cleaned/maintained.
