Fletcher Street Urban Riding Club has been teaching kids about horses for 20 years

As a child, Ellis Ferrell was champing at the bit to own his own horse.

He says he loved horses from an early age.

Now, he's living the dream, with 14 horses at the Fletcher Street Urban Riding Club in Philadelphia.

He found the club in 2004 with a mission in mind: "Give the kids something to do; teach them how to ride," he says.

He says most of the kids that come to the club's stables live in the neighborhood.

Ferrell's son, Darrin, helps out.

He says he started riding horses in Pennypack Park in Northeast Philadelphia after going with his dad to the stables.

They teach kids how to ride and care for the horses -- feeding, cleaning stalls and grooming-- usually after school and on weekends.

For many kids, it's their first time on a horse and the club doesn't charge for lessons.

The Ferrells say the kids that come to the club get attached to the horses and most have a favorite.

Ferrell says the club keeps the kids off the street and teaches them life skills through mentoring. He says the club culture has transformed the neighborhood.

"If they learn to respect these horses, they'll learn to respect themselves," says Ferrell.

"They call it the safe haven, says Darrin. "Once they open that gate, it's a different world," says Darrin.

Grandma Was Right About Potatoes and Onions

Sometimes the most memorable food begins with ingredients so ordinary that their transformation feels almost unfair. Southern Fried Taters and Onions take potatoes, sliced onion, garlic, oil, salt, and pepper and turn them into a skillet full of golden edges, tender centers, and deep savory flavor. As the potatoes cook, some pieces crisp against the hot pan while others remain soft enough to soak up the sweetness released by the onions. That mix of textures is what makes a simple recipe so hard to leave alone. Every serving contains a few crunchy bites, several buttery-soft slices, and caramelized onion tucked between them. No cream sauce, specialty cheese, or expensive meat is required to make the skillet smell like a proper country breakfast or old-fashioned family supper.

These Ritz Cracker Sandwiches Vanish Before the Party Starts

Ritz Party Sandwiches transform familiar buttery crackers into warm, savory appetizers that are exactly the right size for grabbing from a crowded table. Cheese and flavorful sandwich fillings sit between pairs of crackers, creating miniature bites with a crisp exterior and rich center. As they bake, the cheese melts, the filling warms, and the crackers become even more aromatic without losing the delicate texture that makes Ritz crackers so recognizable. Each small sandwich delivers salt, butter, cheese, and savory flavor in one or two bites, which explains why people rarely stop after taking only one. The recipe does not require elaborate pastry, specialty bread, or hours of preparation, yet the completed tray looks more thoughtful than simply opening a box of crackers. It is party food built around convenience without tasting like the cook took an obvious shortcut.

Remember the White Candy That Seemed to Appear in Every Grandma’s Christmas Tin?

Divinity is one of those old-fashioned candies that can instantly bring back a kitchen you haven’t stood in for years. Light, fluffy, and almost cloud-like, it’s nothing like dense fudge or chewy caramel. The outside sets with a delicate finish while the center stays soft and airy, with that unmistakable melt-away sweetness that made it a holiday candy-table favorite. It looks deceptively simple, but anyone who grew up watching a grandmother, aunt, or church-supper expert make a batch probably remembers there was a little technique involved. When it turns out right, those snowy spoonfuls look beautiful piled onto a platter—and somehow taste even better after you’ve spent years wondering why people stopped making them.

Four Ingredients Make This Lemon Cake Almost Unfair

A dessert with only four ingredients should not taste this rich, but lemon pie filling, cream cheese, cake mix, and butter know exactly how to work together. The lemon creates a bright, tangy layer while the cream cheese adds pockets of smooth richness. Cake mix and melted butter form a golden topping with soft sections, crisp edges, and the comforting flavor of a homemade cobbler. Every spoonful lands differently depending on how much citrus, cream cheese, and buttery crust it captures. The result feels more complicated than the assembly suggests, making this recipe ideal when time is short but dessert still needs to impress. As it bakes, the lemon bubbles around the edges and the top becomes golden, filling the kitchen with an aroma that makes waiting considerably more difficult.
