Ranch Pizza serving up slices during first Downtown Hillsboro Saturday Market

Downtown Hillsboro’s newest pizza spot is opening the oven to a world of flavor — with a side of ranch.

Ranch Pizza will hold a grand opening ceremony at 1 p.m. Saturday, April 27, at its new location at 142 S.E. Second Ave. Organized by the Hillsboro Downtown Partnership, the event will take place during the year’s first Downtown Saturday Market.

The Oregon pizza chain makes its way to the area amid an influx of new businesses , but co-founder Eric Wood expressed how downtown’s magnetic charm and positive community reception brought the restaurant to Hillsboro.

"It felt like Hillsboro chose us, and we are thrilled to become a part of this welcoming community," Ranch co-founder Eric Wood said.

Ranch started off as a humble pop-up restaurant in 2017 — delivering pizzas on foot or bike. Now, Ranch operates seven restaurants across the state, including locations in Portland, Beaverton and Oregon City.

Slinging sauced-up square slices, Ranch Pizza draws influence from Sicilian and Detroit-style pizzas with thick, crispy crusts. Per the name, the restaurant has developed a cult following for serving pies with complimentary ranch dressing.

"We are thrilled to open our doors in Hillsboro and share our love for square pizza with the community," Wood said. "Our journey started with a passion for creating delicious pizzas and fostering a sense of community around our food. We are excited to bring our unique flavors and hospitality to Hillsboro."

Ranch is the second pizzeria as of late to set up shop downtown, filling the gap of the shuttered Sizzle Pie — which closed four months after it opened in Main Street Commons .

To commemorate the new spot, Hillsboro Mayor Steve Callaway will be present for a ribbon-cutting ceremony, which the community is invited to.
