    New sausages unveiled at Fresno State’s ‘Sausage Fest’

    FRESNO, Calif. ( KSEE/KGPE ) – Fresno State Students hosted the first “Sausage Fest” on Thursday, in what organizers hope will be an annual event showcasing the best flavors students have come up with.

    Fresno State students from the Meat Technology 172 class, which teaches the comprehensive study of meat sciences topics, hosted their first John A. Jacobs Sausage Fest on campus.

    Students designed and developed their own sausage flavors – and faculty, staff and sausage supporters had the chance to try the products and learn about the creation process.

    Sausage flavors on show included a coffee sausage and a breakfast sausage, which includes eggs, hash browns and bell peppers.

    “The most exciting part of being able to do this was working with new equipment I never touched before and using the spices and ingredients that I never even thought of, and really pursuing that,” said fourth-year student Kaden Sherrell.

    Sherrell, an agriculture major, says he learned it was easy to take raw materials or ingredients and shape them into something different. He made a traditional representation of a salami called ‘Nduja.

    According to Fresno State officials, student assistants in the meat lab produced over 25 different types of sausage. The meat products are sold on campus at the Gibson Farm Market.
