    Veg-N to Move into Meridian Mall Food Court Soon

    Veg-N , a vegan restaurant previously based at East Cesar Chavez Avenue near Old Town Okemos , announced they would be moving to “the old Italian spot in the Meridian Mall Food Court” on Facebook . The news was first reported by Lansing State Journal . The Meridian Mall location is expected to open this May.

    Owned and operated by Jonathan Ristola and Christabelle Dozeman , Veg-N offers “plant based American classics.” The vegan quick-service restaurant focuses on using fresh ingredients and conscious sourcing with sustainability in its heart. The pair also operates a food truck that hosts pop up events. The restaurant concept serves various vegan breakfast burritos, sandwiches, burgers, vegan chicken dishes, salads, bowls, and sides.

    “We are ecstatic to announce that we have secured a new spot to continue to serve our community! Coming this May to the Meridian Mall Food Court, VEG-N will be back better than ever!” The restaurant announced on Facebook that it didn’t have a solidified grand opening date just yet.

    Established in 2019, the owners posted on Facebook in October last year, stating they would not be renewing the lease at the previous location, citing reasons including rising rent and deteriorating building conditions. At that time, the owners wanted to focus on food truck events and were considering a ghost kitchen option.
