An Ypsilanti Bakery is Working on its First Brick and Mortar Location

The vacant space from Go! Ice Cream, which closed in Ypsilanti last October, will soon have a new owner. According to an MLive article , Beara Bakes will take over the storefront at 10 N. Washington St. this summer. The bakery sells pastries and baked goods made from scratch.

Founded by Cat Spencer , the bakery started in the summer of 2020. However, the concept gained so much popularity that it soon started doing pop-up events and wholesales at local coffee shops. An incubator kitchen at Growing Hope has sustained the business over the past three years, but Spencer wanted to move forward and open their own shop.

“We are over the moon to finally have our own space,” Spencer said in an email to What Now Detroit .

Beara Bakes will be serving its famous biscuits, a recipe Spencer learned from Abby Olitzky during her time at Spencer restaurant in Ann Arbor. “It’s similar to how you would make a puff pasty dough but with buttermilk biscuits,” Spencer said.

The new bakeshop will serve breakfast and lunch. While there are no current plans to serve alcohol, Spencer does have plans to develop a seasonal temperance beverage menu. The restaurant is currently raising funds to cover kitchen equipment purchases. Other items on the menu include flavored croissants and hand pies, both highly recommended by Spencer.

“We do a lot of different variations and flavors depending on my mood and the season. I think my favorite we’ve done so far is the everything bagel spiced croissant. Also, our hand pies! Right now, we have an apple and ricotta hand pie that sells out every week at the Ann Arbor Farmer’s Market.”

Maintaining the ice cream shop tradition, Beara Bakes will also collaborate with an ice cream concept called Cold Comfort . The concept is founded by Eric Farrell behind The Bar at 327 Braun Court . Farrell announced on social media that he was closing The Bar in May to focus on developing Cold Comfort.
