According to a recent permit filing, Carino Coffeehouse has filed for a location in Vancouver at 1002 Main Street.

“So our goal has been June for our opening date but with permits and unexpected things that happen…we have our fingers crossed for July,” co-owner Melissa Mancillas told What Now Portland .

“We will have most basic coffee drinks and a couple of traditional Mexican items like Cafe de olla, Mexican mocha with Mexican chocolate, habanero Mexican mocha, and the drink we are most excited about is all we will do with horchata. Patrons can always come in and get a traditional horchata and of course, some coffee drinks that include our in-house created horchata!”

“They will also be able to get Mexican sweet bread (pan dulce) and sincronizada (it’s like a quesadilla but with ham) (also known as a flour tortilla sandwich). We make our own tortillas. Also, we have a family recipe for a “Hot Sauce” that was passed down from our late Dad who will be in the shop to purchase or try with our food items. It’s called “Hank’s Hot Sauce,” (a tribute to our father, Henry).”

“My sister and I’s dream was to open up our very own coffee shop which started a few years ago as just an idea. We both developed a deep love for the personal experiences we would have over a cup of coffee.”

“A little back story on us, my husband and I raised my sister Janelle (the other owner) since she was 14 when she came to live with us after the passing of our dad, and she’s 29 now. So we are incredibly close and she’s like my daughter. It is extra special that we get to do this together!”

“For me, it was the late date nights with my husband, my mobile office for years, a place for business meetings & social gatherings. For Janelle (my sister) it was finding new spots that had a cozy atmosphere to be able to read a book & was aesthetically designed to take cute pictures for social media.”

“For both of us, it was always a place where deep conversations would happen. Our relationship as sisters turned into becoming best friends & now business partners! We chose Cariño for our shop’s name because in Spanish it translates to terms of endearment like dear, honey, love & affection.”

“Coffee is our love & affection and our passion is what happens over a cup of coffee. We also want to be a space where incredible things happen, especially over a cup of coffee! The Coffeehouse is also a tribute to our Mexican heritage. We’re so excited to open a beautiful Mexican specialty coffee shop together.”

“It has been so fun designing & creating a space that will be an extension of us & bring a little piece of our culture into the city of Vancouver, WA!”
