Galesburg's Knox College staff help open Obama Presidential Center
Knox College dining services employees spent four days helping launch the Obama Presidential Center in Chicago, supporting VIP events and serving visitors during the facility's public opening. The opportunity came through Bon Appétit Management Company, which provides dining services for both Knox College and the Obama Presidential Center. College dining staff traveled to Chicago after a June 18 dedication ceremony and worked during opening activities that began when the center welcomed the public the following day, according to a community announcement. "It didn't hit me until we got there. I knew it would be a big deal, but going through all the security checks and seeing all the famous people, that's when it really hits you how big a deal this is," Sous Chef Anthony Mason said. The Knox team included General Manager of Dining Services Mitch McCoy, Sous Chefs Rudy Martinez and Anthony Mason and Catering Manager Karissa Soper. McCoy said the request came after a Bon Appétit district manager contacted him about staffing needs tied to the large-scale opening. "One of our district managers helped them get their operation running, then, knowing they were having a large-scale opening, called me and asked if we had anyone available," McCoy
