Low Carb Coconut Flour Pancakes (Gluten-Free)

Coconut flour and coconut milk add a coconut flavor to the pancakes. They do not bubble like traditional pancakes, so keep an eye on them and griddle until golden brown on each side. With a drizzle of maple, these are a delicious gluten-free meal.

Ingredients

• 3 lg eggs
• 1/4 c coconut flour
• 1/2 c coconut or almond milk
• 2 Tbsp melted butter
• 1 tsp vanilla extract
• 1/2 tsp baking powder
• 1/8 tsp salt
• 1/8 tsp cinnamon, optional
