Caldwell County BBQ has been selected as one of two new dining options coming to downtown Peoria , located at 8315 W. Washington St .

The new restaurant will total about 6,600 square feet , including events space and a 1,200-square-foot patio, according to Phoenix Business Journal . Peoria City Council unanimously approved the new development at the beginning of the month, along with a new food hall called The Jefferson House. This will be the third Caldwell County BBQ in the greater Phoenix area, following Queen Creek, which opened earlier this year, and the company’s original located in Gilbert at 18324 E. Nunneley Road.

There is no exact timeline for the company’s third location, but Caldwell County BBQ proposed site includes 10-year lease. When it opens, customers can expect Texas-style BBQ, where the meat is 100% wood-smoked, fueled with a mixture of mesquite and pecan in homemade smokers. The restaurant’s beef brisket is a popular option and is slow-cooked for 20 hours until it is tender and moist. Another popular option is the restaurant’s fall-off-the-bone St. Louis ribs. Besides delicious meat options, Caldwell County BBQ offers several sides and desserts.

“If Texas and Arizona had a baby, it would be Caldwell County BBQ,” according to the company’s website. “We offer Texas meat-market style barbecue with nods to Arizona, like citrus and a little bit of green chile zip. YoYou’reoing to love our beef brisket, slow-cooked for 20 hours until it is tender and moist. Our tender, fall-off-the-bone St. Louis ribs spare nothing on flavor. Caldwell County BBQ’s pulled pork has a simple rub of salt, pepper, and garlic that lets the natural flavor of the meat come through.”
