    Violations (Inspector comments):

    • The Person in Charge did not demonstrate adequate knowledge of the PA Food Code, as evidenced by incorrect responses to food safety questions related to hair restraints and jewelry.
    • Food employees observed in food preparation areas, wearing bracelet/watch/ring on hands or arms while engaged in food preparation.
    • Food employees observed in drive-through area, not wearing hair restraints, such as nets and hats.
    • A food employee was observed touching beverage ice, a ready-to-eat food, with bare hands. Employee used bare hand and beverage cup to scoop ice from ice hopper. Ice scoop was available and properly stored on the outside of the hopper. Provided training.
    • Upper interior of micowave, a food contact surface, was observed to have dried/splattered food residue and was not clean to sight and touch.
    • Non-food contact surfaces not cleaned at a frequency to preclude accumulation  of dirt and soil.
    • Floors and walls under and behind equipment in front food preparation areas of the food facility are extremely dirty, greasy, and in need of cleaning. Observed food debris under and behind cooking/holding/preparation equipment.
    • A working container of degreaser was stored on the sandwich bain-marie with food, equipment. (Corrected.)

    Pizza Hut, 3121 Cape Horn Road, Windsor Township

    Violations (Inspector comments):

    • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
    • Observed open boxes of donut holes unprotected under leaking condensation unit in walk-in freezer, which is subject to potential contamination.
    • Meatballs, mozzarella and cheddar cheeses, diced tomatoes, pizza dough, sauce and many other refrigerated, ready-to-eat time temperature control for safety foods, were date-marked by the facility, but were beyond the 7-day use or sell-by date and requires discarding. (Corrected. Facility discarded.)
    • Food pans, lids for pans, utensils, measuring cups and many other pieces of equipment, food contact surfaces, were observed to have old food residue and were not clean to sight and touch. Pizza rocker and spatulas, a food contact surface, was observed to have food residue and was not clean to sight and touch. Facility does not have plan for cleaning and sanitizing or replacing these every four hours.
    • Observed clean utensils and measuring cups stored in a dish tray that was very dirty.
    • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
    • Observed shelving units throughout facility, with an accumulation of food residue and debris on non-food contact surfaces.
    • Observed rolling green cart in the back room, with encrusted grease and soil accumulation.
    • Observed shelves, walls and interior of pizza making cold hold unit to be covered in old food residue and in need of cleaning.
    • Observed wall behind prep counter in back room to be splattered with old food residue and in need of cleaning.
    • Food facility does not employ a certified food employee as required.
    • A Food Employee Certification is displayed, but the individual is no longer employed by the retail food facility.
    • Food facility hot water heater is not producing enough hot water to supply all hand sinks at the time of this inspection. Facility was replacing hot water heater.
