The Pickled Wrinkle Has an Ocean of Dishes to Choose From

Growing up in Winter Harbor, Sarah Christensen feasted on whatever the sea provided. That included the large, carnivorous snails, known as whelks, that inadvertently got swept up in her father’s lobster traps. In the down east region, where the snails are typically pickled, they’re known as “pickled wrinkles.” They’re considered a local delicacy and have served as a sustenance food during hard times. As an adult, Sarah became an evangelist for pickled wrinkles. After high school, she moved to Honolulu and got a job at an Irish pub, where she met her future husband, Jesse. During trips home, she would whip up batches of pickled wrinkles to pack in her carry-on and share with her Hawaiian friends. In 2013, Sarah and Jesse moved to Maine and bought what was then the Nautica Pub, in Birch Harbor. Jesse joked with friends about renaming the place the Pickled Wrinkle. “We all thought that was hilarious,” he says. A year later, “we finally worked up the guts to do it.”
