Plano-Born Dillas Quesadillas Eyes 50 Locations With New COO
F rom a single restaurant in Plano to an ambitious goal of 50 locations, Dillas Quesadillas is preparing for its next stage of growth. The North Texas-based restaurant brand has promoted Michael Mabry to chief operating officer, a newly created position designed to support expansion as the company grows beyond its current 11 locations. Effective Oct. 7, Mabry will oversee daily operations, marketing and franchise sales, allowing co-founders Kyle and Maggie Gordon to focus on growth strategy and capital. “Michael knows Dillas, knows us and understands what it takes to scale a restaurant brand,” Kyle Gordon, co-founder and CEO of Dillas Quesadillas, said in an official statement. “We have six restaurants in the DFW franchise pipeline and additional growth underway in Louisiana.” Preparing For The Next Chapter Mabry brings more than 30 years of restaurant industry experience, including leadership roles at MOOYAH Burgers, Fries & Shakes, Fuzzy’s Taco Shop and Famous Toastery. Costco Sets October Opening Date For Grandscape
Costco is putting a date on the calendar for its newest North Texas warehouse. The 155,000-square-foot Costco at Grandscape in The Colony is set to open Oct. 16, according to a spokesperson from Grandscape. The store will mark its opening with a public ribbon-cutting ceremony at 7:30 a.m. Friday. The warehouse will sit near the intersection of Spring Creek Parkway and Grandscape Boulevard. The project was approved by The Colony City Council in September 2025 and broke ground in December. “We are very excited about Costco coming to Grandscape,” a spokesperson for Grandscape previously told Local Profile. A New Costco For Grandscape The new warehouse is part of Costco’s continued growth across North Texas, where new stores have followed the region’s population growth and demand for large-format retail. In 2025 alone, three new Costco locations were announced in Collin County. Stores in Prosper and Allen opened that year, followed by the Celina location in August 2026. A new Costco was also announced for Wylie . The Wylie warehouse is expected to begin construction Oct. 12, 2026, with work scheduled to continue through Aug. 6, 2027. Dallas Office Towers Make Way for 435 Apartments on LBJ Freeway
Three vacant office buildings along Lyndon B. Johnson Freeway in Dallas are being torn down to make room for 435 apartments, with construction now officially underway on a project that will set aside half its units as affordable housing. High Street Residential, the residential arm of Trammell Crow Company, has broken ground on the Class A multifamily community at 5550 Lyndon B. Johnson Freeway, with completion expected by summer 2028.
