Augusta Eats: North Augusta tavern offers original flavors with Southern flair
The Augusta area’s dining choices keep getting better. It seems that a couple of times a year, a unique, locally owned and operated restaurant brings a unique perspective to their food, often with a Southern flair that makes it more special. The owners of Brinkley's Chop House in North Augusta recently expanded their portfolio with Brink's Tavern, a more casual restaurant that opened in August in the new Beacon Bluff development on Georgia Avenue. The new restaurant isn't far from Brinkley's Chop House, located in the SRP Stadium park. Brinks' Operations Manager Mickie Defelice described the new restaurant as a "sports bar without calling it a sports bar." Her point: Brink's features a 25-station bar, 11 big screen TVs, a 189-inch LED TV, an outdoor patio with TVs, a kids' outdoor play area, and plans to have live outdoor music, Defelice said. That comes with a full menu of Southern-inspired seafood dishes, burgers, fried chicken, sandwiches, and more, all elevated by head chef Ed Defelice, who happens to be her husband. The couple also got Brinkley's Chop House off the ground in 2022 before the owners of both restaurants, Terry and Cimberlie Brinkley, asked them to launch this restaurant, their
