The Knox team included General Manager of Dining Services Mitch McCoy, Sous Chefs Rudy Martinez and Anthony Mason and Catering Manager Karissa Soper. McCoy said the request came after a Bon Appétit district manager contacted him about staffing needs tied to the large-scale opening.
