Topeka baker finds sweet success with honor system
The owner of Butternut Bites bakery cart began pursuing her culinary passion in 2020, when the COVID-19 pandemic derailed her earlier plans. “I think food is so beautiful and fun. It’s a great way to express creativity, and it makes people want to come back,” Lindsey Jones said. Jones serves fresh bread and baked goods like scones, cookies, pretzels and croissants from a kiosk cart in her driveway at SW 29th and Arvonia in Topeka. Butternut Bites has gained a significant social media following on Facebook and Instagram since the cart opened in February. The business got its start in the midst of the pandemic. Red Lobster closed its Tallahassee restaurant in May after 56 years, ending the run of its oldest continuously operating location. The same month brought closures in Pennsylvania, Kansas and Missouri. Then, in June, its Times Square restaurant shut down after 23 years, leaving Manhattan without a Red Lobster. “Times Square has been an important chapter in Red Lobster’s history, and this was a difficult decision,” the company said. Father-and-son farm duo in Topeka grows fresh produce and community
Growing your own local produce requires hard work and dedication, which are both traits that this son and father duo have perfected over their years of business in Topeka. Insane Paine Produce, near 3227 NE Seward Ave., is owned and operated by Luke and Mark Paine. The local produce farm has been operating in Topeka for 16 years after holding a grand opening May 6, 2010. At that time, Luke Paine had convinced his father they could take a crack at running their own greenhouse and farm operation. After all, they maintained smaller gardens around their house. And the two had been buying goods from the Amish community in Jamesport, Mo., said The Capital-Journal archives. Now, the farm has turned into something much bigger than them both — community staple. 'Make as much available' Right now, seasonal produce such as cucumbers, zucchini, watermelon, tomatoes, and more can be found at Insane Paine Produce, where the pair have spent countless hours growing and harvesting the fresh goods. The Paines soon will begin the process of growing pumpkins and other items for the fall season. "Everything we grow is grown right here," said Luke Paine. "You can see where we grow it
