Monroe County restaurant inspections for March 18-24

These establishments in Monroe County were inspected between March 18 and 24, according to Pennsylvania Department of Agriculture records.

The Pennsylvania Department of Agriculture provides this disclosure: "Please remember that any inspection is a 'snapshot' of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment."

Out of compliance

Sango Kura: 39 Broad St., Delaware Water Gap

Inspected March 19. Jurisdiction: Pennsylvania Department of Agriculture. Violations: 10

Inspector determined the person in charge did not demonstrate adequate knowledge of food safety. Inspector observed food dispensing utensil stored in flour and not with handle above the top of the food and the container; cooked meats and sauces that were date-marked but would be beyond the seven-day use or sell by date on the next food service date, requiring discarding; a buildup of grease and oil on hood system dripping down above cookline area; a black mold-like substance on the interior surfaces of the ice machine, old food residue on pasta cooking baskets and pasta cooker hot water well and old food and food residue on the pasta making machine; an unknown liquid inside the bottom of a bain marie and leaking onto the floor when opened; non-food contact surfaces in need of cleaning; dirty and dusty kitchen area and a black mold-like substance on the floor between the stove and bain marie; containers in the counter service area, used for storing chemicals/cleaners, not marked with the common name of the chemical; and no HACCP (Hazard Analysis Critical Control Point) plan had been submitted for shelf-stable acidified foods (hot sauce was removed from sales floor and these foods are not to be produced until a plan is approved by the Pennsylvania Department of Agriculture).

Inspected March 21. Jurisdiction: Pennsylvania Department of Agriculture. Violations: 10

Inspector determined the person in charge did not demonstrate adequate knowledge of food safety. Inspector observed food employees in the kitchen area not wearing proper hair restraints; thermometers not available or readily accessible; sanitizer test strips or test kit to determine appropriate sanitizer concentration not available; chemical sanitizer not being used on equipment and utensils after washing and rinsing (proper procedures discussed and set up); no certified food employee employed; soap un available at the handwash sink in the kitchen area; paper towels not readily accessible at the handwash sink in the kitchen; a grated ceiling vent with a buildup of dust; and containers in the kitchen area, used for storing chemicals/cleaners, not marked with the common name of the chemical.

Inspected March 18. Jurisdiction: Pennsylvania Department of Agriculture. Violations: 5

Inspector observed sanitizers for equipment and utensils were unavailable; an employee having an expired food manager certificate; soap unavailable at the handwash sink in the kitchen area (corrected); missing ceiling tiles in the grocery area; and rodent droppings under the handwash sink in the kitchen area.

No violations
