Illinois once again ranks as the nation's top pumpkin producer.

New USDA data shows the state produced 533 million pumpkins in 2025. That total is more than three times California, which ranked second with 162 million.

Illinois also led the country in pumpkin acreage, with nearly 15,000 acres, though production has rebounded from 2024. The total is still below the nearly 700 million pumpkins the state produced in 2022 and 2023. While Illinois leads in production, it ranks ninth in the number of pumpkin farms.

Four Ingredients Turn Cornmeal Into Crispy Southern Comfort

Southern hoecakes demonstrate how a few humble ingredients can create something far more memorable than their simplicity suggests. Cornmeal, liquid, egg, and hot fat come together into small cakes with crisp, golden edges and tender centers. The flavor is straightforward and deeply comforting, especially when bacon grease adds its smoky character to the pan. They resemble pancakes in shape but carry the rustic texture and savory corn flavor of skillet cornbread. Each cake develops plenty of browned surface, making those edges the part everyone searches for first. This is old-fashioned cooking built around necessity, thrift, and ingredients that were easy to keep on hand. The result remains valuable today because warm, crisp corn cakes still know how to make a bowl of beans or a plate of vegetables feel like a complete meal.

Four Ingredients Make This Roast Fall Apart by Itself

A slow-cooker roast that practically shreds itself sounds like the result of careful seasoning and a long ingredient list, but this version needs only four ingredients to reach that tender finish. The slow cooker provides time and gentle heat, allowing the beef to soften while the simple seasonings concentrate into a rich cooking liquid. By dinner, the meat pulls apart beneath a fork and the entire house smells as though someone spent all day actively preparing the meal. The short ingredient list makes it realistic for busy mornings, limited grocery budgets, and anyone who wants comfort food without a complicated recipe. It is hearty, familiar, and impressive in the effortless way slow-cooker dinners often are. Few things feel better than opening the lid after a long day and discovering the main course already tender, hot, and waiting to be served.
