New Lexington diner serves breakfast all day, ice cream and CBD-infused mocktails

A new restaurant on the north side of Lexington is leaning into one of the biggest trends in bars: Mocktails.

Why? Because owner Katrina Buster saw an opportunity.

A former nurse’s aide and restaurant owner, Buster has opened Cosmic Fry, a diner, with an ice cream counter and a mocktail bar in the former Horseshoes spot at 1983 N. Broadway.

Before the COVID pandemic hit, Buster had a restaurant in Louisville. While she was working as a nurse’s aide in Lexington she was hoping to find a food truck when a Realtor she met catering a holiday party connected her to the restaurant spot.

It was great except that she can’t serve alcohol because a previous restaurant lost the liquor license at that spot.

“So what I came up with was mocktail,” Buster said. “There’s bars that will sell you a mocktail but not a mocktail lounge. People want to feel comfortable living in a sober environment, but having fun.”

The mocktails, which are crafted with fresh fruit, Ale-8 One and things like muddled mint, also can be infused with CBD or Delta 9, Buster said, “and it seems to be going over well.”

The space is actually divided into two: One side is bar, where she will have events, and the other is a diner.

That diner, which serves breakfast all day just like these Lexington restaurants , gets brisk business from the nearby hotels.

Buster serves a menu of “over-the-top” thick sandwiches, fries and onion rings, and ice cream because there’s also an ice cream parlor.

She has big plans for the bar side.

“It’s an entertainment venue, and I can bring in comedy shows,” Buster said. “I like to throw events, open mic nights and karaoke, that’s what I do.”

She’s already hosted comedy shows and live music and is booking events.

“I hope the public receives me well, I feel like I’m here to make people smile through my food,” Buster said.

It seems to be working: She opened March 20 for a test run and things are going so well she decided just to stay open.

She had a grand opening April 20 with a ribbon cutting.
