Chefs are getting more specialized, more personal, and much less interested in following a script. When the staff at Toya Ramen were juggling a full house one day last summer, chef Colin Yoshimoto handed diners two bowls meant to represent both soup and birria beef while behaving like neither. Sure, the noodles were there, with broth in the smaller bowl as might be served tsukemen-style, but Yoshimoto had instructed staff to inform diners that they may “sip it, dip it, or pour it.” Part of a collab dinner with Diego Palacios of the Mexican street food project Machetes, the offering combined braised bone-in short rib with red masa noodles and caldo on the side.

Salem ice cream shop could have to paint over mural due to sign code

A newly opened ice cream parlor on Market Street in northeast Salem may have to paint over its mural on the side of the building after learning it is out of compliance with Salem's sign code. On Any Sundae owner Caleb Hayward opened up a second store at the former Baskin-Robbins at 3239 Market St. NE in September. When news of the Baskin-Robbins' store closing reached him, he decided to expand into a new part of the city. "We put a ton of work into painting the building, both interior and exterior ... Updating the equipment, cleaning, putting in some safety features and seating," Hayward said in a Facebook post. "Just generally trying to bring a little bright spot to our new neighborhood." Hayward said he tries to support local artists through hanging artwork, selling stickers and commissioning projects. He hired artist Floydman Sumner , know for his work on Teenage Mutant Ninja Turtles and Garbage Pail Kids, to paint a bright mural on the building with the owner's permission.
