Illegal Pete’s Debuts in Colorado Springs: New Downtown Burrito Spot Opens After Long Delay
Illegal Pete’s held its long-awaited grand opening on April 25. The Boulder-based, fast-casual Mexican food favorite opened its first Colorado Springs location at the corner of Colorado Avenue and Tejon Street. The company first announced plans to open in the summer of 2022. Pete Turner, the restaurant’s founder and namesake, said the target date was pushed back nearly two years due to a combination of COVID-19 aftershocks, internal restructuring, and delays at other locations.
