Louisville chef opens New York-style deli after viral pastrami post
The tale of this New York City-style deli began with a playful Facebook post about pastrami. In October, Louisville chef Eric Morris took to social media to muse about a “pastrami rabbit hole” that sparked in 2020. “I told myself I needed to perfect this and couldn’t move past it,” Morris wrote. “The balance of smoke, the right amount of steam, the ratio of good brown mustard to meat.” He also recalled his short-lived Highlands restaurant, called Faces Bar & Bistro, where he offered pastrami. "Once I got it right, we were selling out literally the minute we opened," Morris wrote in the post, which included photos of his prized cured meats. "I’d love to do a pastrami-centric pop up with classic and also modern variations of it. I found a local bakery that makes the perfect rye for it as well this time. I also want to bring it back so I can eat it again." Quickly, that Facebook quip picked up steam. “I got a huge response," Morris told the Courier Journal. "It was like 200 likes and all these comments. I was like, 'I should actually do something like this.'" More restaurant news: Bristol Bar & Grille
