How does the energy of Realm wines work with the classic yet elevated steakhouse fare of Don's Prime?

Realm Winery’s rich 20-year legacy and status as one of Napa’s most coveted wineries make it the perfect fit for Don’s Prime. Given the exclusivity and caliber of Realm’s wines, pairing them with our menu allows our guests to experience the essence of Napa Valley. The modern yet timeless style of Realm’s Cabernet, known for its bold youthfulness and graceful maturity, creates an unparalleled wine pairing experience.

Does Napa command a certain respect level from your guests when you recommend wines from the region?

Napa Valley’s reputation is certainly recognized by our guests. In the Las Vegas market, Napa Cabernets reign supreme, aligning with the high expectations our patrons have when dining at Don’s Prime. When our guests think of red wine, Napa is at the forefront of their minds. Our selection, particularly wines like those from Realm, exemplifies our commitment to showcasing the finest wines from the world’s most esteemed regions.

What pairing are you most excited for guests to try?

The Realm Wine Dinner at Don’s Prime is truly special, especially with the collaboration between Chef Michael Paley of Fontainebleau Miami Beach and our own Executive Chef Patrick Munster. One pairing that stands out is Realm’s The Bard Cabernet Sauvignon with Chef Munster’s Roasted Colorado Lamb Chops complemented by eggplant and merguez ragout, romesco sauce, and black olive crumble. The 2016 Bard has just entered a perfect drinking window where the fullness and richness of the young cabernet fruit have started to subdue, and the background flavors of spices and savory undertones are beautifully accentuated by the flavor of the lamb, sweetness of the eggplant, and vibrancy of the romesco. We are particularly excited to feature The Bard, a rare gem given its limited production.
