While it may not be my first choice for vegan options, it's a great place for a fun night out.

No, that’s not a reference to Danny Trejo, or Jason Voorhees’ weapon of choice, but to the new pop-up Machetes PDX, which has been selling out of its Mexican street food all over town since July. Started by husband-and-wife team Diego and McKenna Palacios, the business gets its name from long, folded quesadillas shaped like a blade. And when I say long, I mean long. Every one of the pop-up’s machetes comes draped across two paper plates, which barely contain their length.

In your article on taprooms attempting to rebuild their customer base, you fail to mention the biggest reason that people, post-COVID-19, are staying away from taprooms, restaurants and other venues like this, (“Portland taproom owners come together to dream up ideas amid a post-pandemic hangover,” Nov. 5). It is that the price of food and drink has risen significantly. While I applaud the efforts to raise the minimum wage high enough so that people on it don’t qualify for food assistance and other taxpayer-funded social programs, doing this has changed the nature of entertainment and reduced demand for it. There will be a fallout, and it is inevitable that some restaurants and taprooms will fail as the market shrinks. People would do well to remember that the vibrant food and drink entertainment scene that we had in years past was funded on the backs of countless low-paid food workers.
