The JW Marriott San Antonio Hill Country Resort & Spa invites resort guests and local San Antonians to their new dining outlet, FIAMME Pizzeria. Offering Neapolitan pizza within the resort, FIAMME Pizzeria is now open to the public. Hours of operation are 4 p.m. to 9 p.m. daily.
Meaning “flames” in Italian, FIAMME Pizzeria serves an enticing selection of Neapolitan pizza, Italian-inspired appetizers, salads and desserts, and the resort’s signature Hill Country Honey Blonde Beer and Desert Door Paloma Preserve along with other beers and cocktails.
“The addition of FIAMME Pizzeria adds elevated, casual dining to the resort’s world class culinary options,” says Sebastian Mena, Director of Food & Beverage at JW Marriott San Antonio Hill Country Resort & Spa in a statement. “We are thrilled to introduce a new dining option that reflects our commitment to offering guests unparalleled dining experiences that are unique and authentic.”
FIAMME Pizzeria’s menu showcases a selection of Neapolitan pizzas including Margherita, Four Cheese, Garden Harvest, Tuscan Garlic Chicken and Pizza Carnivora, each prepared with fresh ingredients and baked to perfection. A special on the menu is the Texas Hot Honey Pizza with pomodoro, mozzarella, ricotta, coppa, prosciutto, arugula and Texas Hot Honey. Other highlights include a Strawberry Caprese Dip and a Burrata available as starters, and seasonal and traditional salads with two gluten-free options. An assortment of Italian desserts, all made in-house, will allow guests to end their meal on a sweet note.

Located on the lower lobby level adjacent to Cibolo Moon, FIAMME Pizzeria provides seating for approximately 25 people, providing guests with options to dine al fresco amidst the resort’s picturesque outdoor areas or take their meal to go.
Neapolitan pizza is a style of pizza created in Naples, Italy, and is traditionally made with simple, fresh ingredients and baked at 900 degrees for up to two minutes creating a light, fluffy crust with a crispy outside layer. FIAMME Pizzeria features a custom Morello Forni dome mosaic pizza oven imported from Italy. The pizza oven is seven feet in diameter with seven-inch-thick walls, weighing over 7,000 pounds. An electric rotating pizza stone is featured in the center of the oven, allowing for the most consistent and authentic product.
FIAMME Pizzeria will join the eight existing dining outlets which include Cibolo Moon, serving creative Texas Hill Country inspired cuisine among a diverse tequila selection; 18 Oaks, the resort’s upscale fine dining steakhouse; High Velocity, the expansive sports bar and restaurant with a 120-foot-long HD video wall and a Topgolf Swing Suite; Crooked Branch, the acclaimed lobby bar and restaurant serving Asian inspired tapas dishes with a Texas twist; Rivertop Grill, an outdoor restaurant within River Bluff Water Experience; Replenish Spa Bistro, a relaxed restaurant with health-conscious dishes within Lantana Spa; the resort’s food trailer, Nourish; and an on-site Starbucks.
