    Handwashing, food storage among violations in metro Phoenix restaurant health inspections

    Maricopa County health inspectors cited one restaurant for four health violations during the week of May 24. The violations ranged from raw food stored above cooked food in a walk-in fridge to cheese that was left out too long.

    A priority violation is a major violation that directly contributes to an increased risk of foodborne illness or injury. If listed in inspection reports, remedies implemented during the inspection are noted.

    During the week of May 24, inspectors visited more than 1,000 restaurants along with other food-serving facilities in hospitals, senior homes and schools. One hundred and sixty restaurants received an "A" rating. See a sampling of the many restaurants that inspectors graded "A" at the end of this article.

    4 violations

    Sbarro, 5000 S. Arizona Mills Cir Suite 657, Tempe

    • After washing their hands, an employee touched their face while eating and started to handle food without re-washing. The employee was told to wash their hands again.
    • Flats of raw shelled eggs were stored on the top shelf of the walk-in fridge above cut potatoes, cooked pasta and ham. An employee moved the eggs to proper storage.
    • Shredded cheese was piled high in a pan on top of the pizza-making table. It was measured at 45F-46F internally and the manager did not know how long it was there. The manager discarded the cheese.
    • Quaternary sanitizer was measured at greater than 500 ppm in the sanitary bucket and the three-compartment sink. The manager had the sanitizer re-made to the proper concentration according to the directions on the label.
