Cultivate’s first Sunday brunch drew 155 diners, 95 short of the 250 staff say they need to continue the brunch program into next year. According to Cultivate staff, the pilot is meant to determine the demand for a brunch option on campus and respond appropriately. Cultivate arranged for brunch to be served from 10 a.m. to 2 p.m. on three Sundays of the quarter: Oct. 25, Nov. 15, and Dec. 13.Jon Biltucci, associate director of dining, said staff really wants to see the program continue, but that it would need to see a little more participation to make that feasible. The Oct. 25 brunch generated $3,300 in revenue. Despite bringing in more transactions than a typical Sunday, the brunch still fell short of staff’s goals. According to Biltucci, an average Sunday brings in 9,968 transactions across all dining locations on campus. At Cultivate’s first brunch, they recorded 10,280 transactions across all dining locations.Biltucci and other Cultivate staff have identified areas of improvement for the next brunch Nov. 15. “We can balance the workflow a little bit more,” Biltucci said. “The other thing that we look to do is just make sure that we know where the demands are on some of those items.”Staff had expected a more even split between breakfast and lunch items; however, 90% of the customers purchased breakfast items. According to Biltucci, this meant staff responsibilities were not balanced. As a result, breakfast items like cinnamon rolls ran out and wait times increased. For the following brunch, food will be stocked, and staff will be reorganized to meet the demand. Zoey Yan, a first-year student on West Campus, dined at Cultivate for the first time during the Oct. 25 brunch.“I’ve heard people talking about Cultivate before, but I hadn’t really done any deep dive into it,” Yan said. A friend invited Yan to Cultivate’s brunch, where she said she was surprised by the quality of the food. “It was just like a better quality version of the dining hall, and it had more … options that the dining hall doesn’t have,” Yan said. “Everything just felt fresher and tasted better.”Cultivate focuses on clean, locally sourced ingredients and a pub-style service model in order to provide students with a different experience from traditional dining halls. This dining style comes with higher prices than Center Table or Local Point, which carries over to the brunch menu. Yan said she believed this price difference could be a barrier for some students on lower-level dining plans. “If you’re solely relying on your dining plan, it’s definitely not sustainable to be going there a lot because it definitely costs more,” Yan said. “It’s definitely like a treat.”Thirty of the 155 diners filled out surveys left on tables. “Even if there’s things that aren’t perfect, we want to hear about that too so we can make this the best experience it possibly can be,” Biltucci said. “We would really love to see more people come out, participate, and take the survey next time.”Cultivate consulted student feedback to create the program, taking student input from surveys and the Dining Advisory Board. Now, Cultivate staff plans to continue conferring with students to improve and expand the program.“Please come out to the event, please try the food, please give us your honest feedback,” Biltucci said. “We’re really looking to make changes to make this a successful program, and that includes taking a survey and telling us that there’s other things you’d like to see.”Reach contributing writer Ryn McGraw at news@dailyuw.com.
