He is a long time meat cutter in Springfield that many sportsmen seek out."There's a difference between a meat cutter, which can tell the angle on which way to cut the steak so it's the tenderest, versus what people would term as a butcher," he explained.Swan says meat cutting is a trade that is quickly vanishing in today's society."Taking it off the bone to get those pieces is really a fastly growing trade that is going away," Swan said.That's why he started a meat cutting school to teach the next generation how to provide for themselves and their families."That's been really good because a lot of homesteaders raising animals would like to do it themselves, so those are pretty much the students that have been coming to the meat cutting school. We've had it two years in a row and we've already got people signed up for next year," Swan explained.Homesteaders just like Brian Lane that started working here at Swan's Custom Meat Cutting just weeks ago."This is something that a lot of skill goes into it and Bruce really clearly cares and knows what he's talking about, so I'm just really honored to be able to learn this," Lane said.Swan says it is truly is a skill worth learning."I can't draw a good stickman but I can make a big piece of meat look really beautiful," he said. </div>
