Middle school and high school students can benefit from bringing meals from home, particularly when school days extend into athletics, extracurricular activities, part time jobs and evening commitments. For parents, preparing lunch at home also provides greater control over ingredients, portions, added sugars and the amount of heavily processed food their children consume.A healthy school lunch does not need to be complicated or expensive. Fresh fruit remains among the easiest foods to pack. Apples, oranges, bananas, pears and grapes require little preparation and travel easily. Strawberries, blueberries, melon and other cut fruit can be prepared the night before and refrigerated in reusable containers.Vegetables can be handled much the same way. Baby carrots, cucumber slices, celery, cherry tomatoes, bell peppers and snap peas can be washed and portioned ahead of time. Keeping several prepared choices in the refrigerator allows parents or teenagers to assemble a lunch quickly without depending entirely on chips, crackers, cookies and other packaged snack foods.Protein can help make lunch more substantial and provide students with food that carries them farther into the afternoon. Hard boiled eggs, chicken, turkey, tuna, cheese, yogurt and leftover meats are relatively simple choices. Beef jerky and meat sticks can also provide convenient portable options for days when refrigeration or preparation time is limited. Parents purchasing jerky and meat snacks can compare nutrition labels for sodium, added sugar and saturated fat because the nutritional content varies widely among products.Sandwiches are not required for a complete lunch. Families interested in reducing refined breads and highly processed carbohydrates have numerous alternatives. Turkey and cheese can be rolled together and served with vegetables and fruit. Chicken can be paired with carrots, berries and yogurt. Eggs, cheese, sliced vegetables and fruit can create a filling meal without bread. For students who enjoy sandwiches, whole grain bread can provide fiber and remains an inexpensive, practical option. Healthy eating does not require eliminating every familiar food. The greater opportunity comes from increasing the proportion of fruits, vegetables, protein and minimally processed foods while reducing reliance on products containing large amounts of added sugar, sodium and refined ingredients.Dinner leftovers can make school lunch preparation considerably easier. Extra chicken, turkey, steak, meatballs, roasted vegetables, rice or beans can be refrigerated overnight and portioned the following morning. Soup and chili can be reheated and placed in insulated food containers for students who prefer a warm lunch.Preparing several foods at once can also reduce the weekday workload. Parents can wash fruit, cut vegetables, boil eggs and portion proteins during the weekend. Teenagers can participate by preparing their own containers for several school days. When the refrigerator already contains ready to pack ingredients, assembling lunch can take only a few minutes.Food safety remains important whenever meat, eggs, dairy products or other perishable foods are being carried to school. Insulated lunchboxes with adequate cold packs can help keep cold foods at appropriate temperatures until lunchtime. Heated foods should be placed in insulated containers intended to maintain temperature. Reusable containers should also be washed regularly, particularly when they have held meat, dairy products or cut produce.Older students may need additional food beyond lunch. Southern Oregon teenagers participating in football, soccer, volleyball, cross country, band and other activities can spend many hours away from home. Students who work after school may face similarly long days. Packing an additional piece of fruit, yogurt, cheese, jerky or another nutritious snack can provide an afternoon option without requiring a trip to a vending machine or convenience store.Nuts and nut butters can provide protein and healthy fats when permitted by the student’s school. Parents should check school policies before including peanuts or tree nuts because allergy restrictions can differ among schools and classrooms.Water is another simple addition. Sending students to school with a reusable water bottle can reduce dependence on sodas, energy drinks and heavily sweetened beverages. Milk and other unsweetened beverages can also accompany lunch according to a student’s nutritional needs and preferences.Parents do not need specialty products or elaborate recipes to prepare nutritious lunches. Chicken, carrots, grapes, cheese and water can make a straightforward meal. Another lunch might include turkey, cucumber, an apple and yogurt. Hard boiled eggs, berries, vegetables and a meat stick can provide another combination.Teenagers can also be given greater control over what goes into their lunchboxes. Parents can keep several fruits, vegetables and proteins available and allow older students to assemble meals according to their preferences. Students are more likely to eat food they have helped select, and preparing lunch provides practical experience with planning meals and making nutritional choices.A lunchbox at the high school level does not need to carry the childhood image it once did. Insulated bags, reusable containers and compact food carriers have become practical ways to transport meals for students and adults alike. Bringing food from home can simply be another part of preparing for a long day.For Southern Oregon families balancing school schedules, work, athletics and household responsibilities, healthy lunches can begin with ordinary foods already available at the grocery store. Fresh fruit, vegetables, protein, water and thoughtfully selected snacks require some preparation, but they can also make the lunchbox one of the simplest places to improve a student’s everyday nutrition.</div></body>
