    Mightylicious launches gluten-free flour blends

    Mightylicious , a gluten-free cookie company started by a New Jersey mom, is giving home bakers a way to create wholesome treats that fit a gluten- and allergen-free lifestyle.

    In a May 9 press release, the Woodbridge-based, better-for-you brand announced its first line of high-quality, gluten-free flour blends.

    The product comes in three varieties: all-purpose, vegan all-purpose and vegan chocolate brownie mix. The trio are certified gluten-free, kosher, non-GMO verified and free from key allergens, according to Mightylicious.

    Made from top-quality, superfine rice flour, the new blends are milled specifically for baking and deliver a soft, airy texture that is perfect for pancakes, brownies and breads, the company said.

    After being diagnosed with celiac disease in 2012, Mightylicious founder and owner Carolyn Haeler spent years searching for a gluten-free brand that would satisfy her sweet tooth. However, the self-described cookie lover was disappointed by what she found. By 2018, she developed a winning recipe of white rice flour, brown rice flour and tapioca flour and officially launched Mightylicious.

    Along with being 100% free of gluten, wheat and rye, the soft-baked cookies contain all-natural, non-GMO ingredients. They are also certified kosher. The brand’s flavors include Oatmeal Coconut, Oatmeal Raisin, Chocolate Chip, Double Dutch Chocolate Chip, Brown Butter Chocolate Chip, Brown Butter Shortbread and Salted Peanut Butter. It also offers four vegan options: Chocolate Chip, Oatmeal Coconut, Oatmeal Raisin and Double Dutch Chocolate Chip.

    In addition to selling online, Mightylicious has distribution partnerships with several leading retailers. Those includeFairway, King’s, Walmart, Costco, Whole Foods Market and Price Chopper.

    Over the past year, Food & Beverage Magazine recognized Mightylicious as a favorite snack. Popular nutrition website Eat This, Not That also named it one of the best store-bought cookie brands .
