Red Pepper, Cauliflower and White Bean Skillet

Serves 4-6
Ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 sweet red pepper, cut in strips
- 3 cups fresh cauliflower florets, blanched
- 1 15-ounce can of white beans, drained
- 1/4 cup Parmesan cheese, grated
- 1/4 cup green onions, sliced

Directions:
- Heat skillet over medium heat. Add vegetable oil and allow to get hot.
- Add garlic and red pepper strips, cook 2-3 minutes or until red pepper is tender.
- Add cauliflower and white beans. Continue cooking over medium heat until mixture is heated through.
- Season with salt and pepper. Garnish with Parmesan cheese and scallions.
