In partnership with DFW Restaurant Week, 1080 KRLD presents 'Off the Menu,' a new feature meant to provide a glimpse into the history, culture and culinary secrets of long-standing iconic restaurants with ties to this year's DFW Restaurant Week.

On this episode of 'Off the Menu,' we present The Dallas Riviera.

Chef David Holben's career started in the Midwest, took him to France, and then to the first and longest-running five-star restaurant in Dallas. Holben takes people through what The Riviera was like and known for on Lovers Lane and Inwood, from the best dishes, celebrity guests, and his experiences with Julia Child.

He has been the longest-running executive chef for Del Frisco's Restaurant Group and is now the Senior Executive Chef at the helm of Perry's Steakhouse & Grille which is a part of this year's DFW Restaurant Week. He shares his thoughts on the late Jim White and talks about those he attributes his success to in the industry from his formative years to today.
