Michigan’s Best Local Eats: One of Flint’s hottest food trucks puts new twists on Asian favorites

FLINT, MI -- Dustin Totten has a goal to make the first Michelin Star-rated food truck.

As of this point, it has yet to be done in the Michelin Guide’s 100+ year history, but its recent expansion to street food ratings is a good sign that it could happen in the future.

Only one chef in the food truck business was awarded a Michelin Star, but it was for a brick-and-mortar business that he also operates in the same city.

Totten has plans to change that.

He and business partner Travalion Jackson are co-owners and operators of one of the Flint-area’s newest food trucks: Fengshui: Asian Fusion.

Its menu mixes traditional street food tastes of barbecue and Mexican food with Asian twists. Working off of a smaller, starter menu that is soon to expand, the truck has six regular options and a specialty dish.

The menu items include Summer Rolls, Crab Rangoons, Buffalo Chicken Wontons, Philly Cheese Egg Rolls, Sante Fe Egg Rolls, Grandma’s Apple Pie Roll and Birria Egg Rolls.

The truck’s most popular item often fluctuates, Totten said, but most prefer the Santa Fe Egg Roll and the Philly Cheese Egg Rolls.

The truck’s owners and operators are a tight-knit diverse group all with local ties. Totten and Jackson both grew up in the Flint area and want to see other local business owners and fellow Genesee County residents succeed.

“We are just trying to bring the community together so that we are all equal and do something different -- you do not see egg rolls anywhere,” Jackson said.

Fengshui: Asian Fusion has been up and running for less than a year. Totten purchased the food truck off of a friend who struck gold on NFTs and starting to compile a vision for his first truck.

He’s been working in kitchens throughout mid- and southeast Michigan for most of his life. Totten attributed much of his love for cooking to learning at the Warwick Hills Golf & Country Club kitchen.

Fengshui: Asian Fusion has a partnership with Meadowbrook Amphitheatre in Rochester Hills where the truck will be stationed for many of its summer shows.

In between the show dates, Totten opens up at different locations in the Flint area. For this interview, Fengshui was posted at the grand opening of LightSky Farms off East Bristol Road in Burton.

Totten is working on outfitting another truck that “will be as close to fine dining as you can get out of cardboard.”

“I’m literally going to get the best of the best and fanciest disposable dishes,” Totten said. “Anything you can think of in the molecular gastronomy world of culinary -- that’s what I’m going to do.”
