Radcliffe Moab, an independent boutique hotel located in the heart of downtown Moab, Utah, announces the appointment of Troy Szczotka as Chef de Cuisine and Director of Food & Beverage at the hotel’s popular restaurant, il Posto Rosso. The modern Coastal Mediterranean inspired restaurant is already a popular destination for locals and visitors to Moab looking for a great dining experience.
As Chef de Cuisine and Director of F&B, Szczotka will be in charge of the restaurant’s day to day operations, menu curation, and special offerings at the hotel’s busy pool lounge.
Il Posto Rosso’s flavor-rich seasonal menu, cultivated by Executive Chef Shon Foster and Chef Troy Szczotka, utilizes only the freshest locally sourced ingredients from eight local farms and purveyors. Diners can expect house-made pastas, sauces, farm fresh vegetables, and exceptional free range, grass fed proteins procured directly from Radcliffe Hotel owner Rob Radcliffe’s Idaho ranch, Sky Farms.
Chef Troy joins the il Posto Rosso team after spending the last four years as Sous Chef at the high-end boutique resort, Amangiri, located just outside of Lake Powell, Utah.

Il Posto Rosso serves breakfast and dinner in addition to a standout list of craft cocktails made with local Utah spirits, and a full beer and wine list. The restaurant’s specialty crafted pack out lunch is perfect for day long excursions to nearby National Parks. Ordered the night before, a wonderful selection of food items and beverages are packed in a refrigerator bag to accommodate a full day of hiking and adventure seeking.
