Restaurant inspections: Denny’s location has critical violations; 62 satisfactory; 3 correct previous violations

Here are the food service inspections reported by the Onondaga County Health Department from June 6 to 11:

UNSATISFACTORY INSPECTIONS

Reinspection is Required

Critical violations: Approximately one quart of pancake batter found sitting on prep table on the cook line temped at 55 degrees. According to management it was made one half hour before and not stored properly under refrigeration (corrected - placed into cooler). Approximately one half pound of sliced ham in flip-top cooler temped at 49 to 51 degrees. According to management the ham has probably been in the cooler since the previous night (correction - product voluntarily discarded). Other foods in the cooler were temped at 44 to 46 degrees. Cooler operation unreliable.

Thirteen individual servings of cut up potatoes sitting in a stainless pan next to equipment on the cook line, temped at 94 degrees. There was no explanation as to why and how long they were there (corrected - product voluntarily discarded).

The hot hold unit on cook line operating at 130 degrees while the control was turned to maximum heat level, insufficient to keep hot foods at 140-degree minimum (corrected - unit taken out of service and hot foods will be held in another location). Several foods were out of temperature for an unknown amount of time and were voluntarily discarded including four cups brown gravy 123 degrees, 2 cups queso 110 degrees, and 2 cups mashed potatoes 122 degrees.

Violations: Food scale on prep table in rear kitchen not clean with food soil. Used unclean knife and scissors left on unclean prep table in rear kitchen.

Cookline flip-top cooler is leaking water from the bottom shelf when the door is opened and bottom shelf contains food soil.

Low shelving throughout establishment is not clean. Interior of microwave ovens not clean with food soil.

Cook line floors not clean, primarily under equipment and along baseboard areas and corners.
