Taking ice cream to the extreme

Cobbs recently opened a new shop in Parkway Center

You'll find many choices for a cool ice cream treat on a hot summer day at KIK Extreme Desserts at the Parkway Center on Southgate Parkway.

KIK Extreme Desserts owners Austin and Kylee Cobb hold a couple of their extreme desserts.

Austin and Kylee Cobb have taken on the challenge of opening an ice cream business with some special treats. Their delicacies include extreme milkshakes, rolled ice cream, and cotton candy burritos.

Austin is from Caldwell and has a welding career, while Kylee graduated from Meadowbrook and has a degree in social work.

Five years ago Austin was working on the road in Pennsylvania with Kylee along and they stopped at an ice cream shop. Kylee fell in love with the rolled ice cream. Austin told her, “Maybe one day we can open an ice cream shop and call it Kylee's Ice Kream.” At that time the Cobbs didn't expect it to happen, but today KIK is proudly displayed in their store.

A year ago, Kylee still had thoughts of that ice cream shop and told Austin, “Life's too short. Let's do it. We have one life. Let's go after our wildest dream.” When Austin was asked about his role at the ice cream shop, he replied with a smile, “I just want to help make Kylee's dream come true.”

Kylee was guided to the Small Business Development Center where they worked with her every step of the way. Kylee feels she couldn't have done it without their help. The store has 14 employees.

One of the shop's popular items is the extreme milkshake, topped with homemade cake or cheesecake from Emily's Sweets in Caldwell. Choose from flavors like fruity pebbles, peanut butter cup, double chocolate, or birthday cake.

The cotton candy burrito begins with a burrito made of three flavors of cotton candy, made on location. Add three scoops of the ice cream of your choice, three choice toppings and roll it all together like a burrito. 

Watching employee Alyssa Erb make rolled ice cream always draws attention from the customers. “It's artistic. Each one is different. It's cool and exciting to see all the possible combinations. It's really cool when you present it to the customer and see the smile on their face,” Alyssa said.

Customers can choose from 20 ice cream flavors, as well as sugar-free, dairy-free, and gluten-free ice cream products.

KIK Extreme Desserts is located 1228 Southgate Parkway in the Parkway Center. Hours are noon to 8 p.m. Wednesday through Sunday and is closed on Monday and Tuesday. For more information visit them on Facebook or email kikextremedesserts@gmail.com.
