This new Mexican restaurant in Westland serves up some of the freshest tacos possible
The tacos don't get much fresher than those prepared at one of Westland's newest restaurants.
The corn tortillas are made fresh in front of your eyes. They're pressed and cooked. They're then brought out on a plate, covered in delicious toppings.
That's how things are done at Taco Macho, 35495 Ford Road. Located in the former Capitol Coney Island storefront, the new restaurant opened in mid-May serving up authentic Mexican fare.
Rosie Eschamilla, the restaurant's owner, said she felt it was time to open her own place in the United State after moving to Michigan years ago from northern Mexico.
"Back home, we own Mexican restaurants there, and then we moved to Michigan 11 years ago," the Canton Township woman said. "Eleven years later, here I am."
She began working on the space several months ago, transforming the former diner into a spot celebrating Mexican cuisine. The counter sports a new look, and décor lines the walls celebrating the foods of Eschamilla's homeland.
It's taken a little bit to get it up and running, especially with the backup from the county health department stemming from the COVID-19 pandemic.
"Because of the pandemic situation, it's really hard to have inspectors come," she said.

The menu consists of dishes created by Eschamilla, including tacos, enchiladas, bowls and more. Their signature dish, she said, comes in the form of their al Pastor tacos. These come topped with marinated pork, cilantro, onion and pineapple.
"I think the al pastor is our specialty, and also our homemade tortillas," she said. "I think that is something that will (set) us apart."
The restaurant is just her first, but she hopes her concept can grow into a recognized brand across the area. But for now, Eschamilla is just focusing on finding her footing at Ford and Wayne roads.
"Let's dream about it," she said.
