New Restaurant Alert: Catfish Po Boys and More Comes to Olney

With the closing of the last diner that served the traditional Friday night meal, Olney has experienced limited options for catfish during the past couple of years. So Becky and Ed Callison, residents of Graham, decided to open Olney’s newest restaurant, Catfish Po-Boys and More, located at 1012 West Main. The restaurant will be open Tuesday-Saturday from 11 a.m. to 7 p.m.

With more than 45 years of experience in the hospitality industry, coupled with Ed’s license and certification as a chef, the Callisons saw a “real need for this kind of food,” stating that they had owned many restaurants previously, including ones in Possum Kingdom, Terrell and Graham. Although the restaurants were successful, the couple said they decided to sell and move on to the next venture.

Ed explained that the restaurant’s actual name is Po-Boys and More but decided to add ‘catfish’ to clarify that there would be fish available. He said the food is more of a Cajun flare but won’t be too spicy, and the catfish will be regular cornmeal-style fried fish. They plan to serve traditional sides like hush puppies, french fries, coleslaw, cheese fries, fried pickles and onion rings to accompany various styles of Po-Boys, including shrimp, fish, oyster, roast beef and bologna. In addition to Po-Boys, they plan to offer catfish baskets, chicken tenders, chicken sandwiches and chicken wings. The dessert options are Key lime pie and brownies.
